This weeks weather forecast calls for comfort food so we gave sweet potato gnocchi a mash.. I mean bash. This easy & delicious toddler food recipe is from one of our favourite food blogging, dietician moms @natashacorrett. At first we said "Sweet Potato Gnocchi... say what??!! That's way too hard to get right" but luckily we were wrong!
1 x Medium sweet potato
2 tbsp Gluten free flour plus more for dusting the board & dough
1/2 t Nutmeg
1 x Egg
Mash up a medium roasted sweet potato with 1/2 tbsp nutmeg, an egg & add 2 heaped tbsp flour. It’s a wet mixture so use a spoon to make the gnocchi shapes and gently roll in flour (they are wet so don’t expect it to be like normal potato gnocchi) then boil for 3 minutes!
We served it up with a quick & nutritious roasted veggie sauce & found it was delicious for the whole family!
1 x Packet of roughly chopped vine tomatoes
1/2 x Packet, pre-cut butternut
1/2 Onion, roughly chopped
4 x Cloves garlic, peeled
2 tbsp Olive oil
1 t Dried oregano
4 x Basil leaves
Oven roast the tomatoes, butternut, onions & garlic with a drizzle of olive oil & a sprinkle of oregano. When cooled, add the basil & blend in the Nutribullet.
Voila!!!! Good for Toddler, good for Mom & Dad too.
